It's September, which means Fall is upon us! In most parts of the US, Canada, and Europe will see leaves change and cooler weather, while us here in South Florida, September just means a nice breeze in the evenings but hey, a slight change is still something to look forward to. Right?
Cooler weather typically inspires me to make more hot soup dishes, but sometimes, I don't want to wait around or spend 2+ hours cooking up something delicious. So I came up with the most brilliant life hack ever (you can thank me later).
Everyone needs a chicken noodle soup every now and then. Whether it be that you're looking for something to warm you up, bouncing back from a nasty cold, or you just plain love soup (like me) this one is for you!
Preparation time: 5 minutes
Cook time: 5 minutes
Total duration: 10 minutes
Yields: 1 bowl of ramen
Ingredients:
2 carrots
2 cups of water
1 pack of chicken flavored ramen noodles
1 teaspoon of the flavoring that comes with the ramen noodles
3/4 of a lemon
1 tablespoon of cilantro
1/2 cup of shredded chicken (a rotisserie chicken works well or you can boil chicken)
How to make it:
1. Rinse and peel the outer layer of your carrots and chop into small pieces. Set aside.
2. Put the stove on high heat and boil the two cups of water in a small sauce pan.
3. Once your water is boiling, add the carrots into your saucepan and let cook for 1 minute.
4. Add the ramen noodles to saucepan. Let the carrots and ramen cook for 3 minutes, occasionally stirring.
5. After the 3 minutes, turn off the stove top and carefully pour your "soup" into a bowl.
6. Add a teaspoon of the seasoning which comes with the ramen and stir it in.
7. Add pre-shredded chicken, cilantro, and the juice of 3/4 of a lemon. Let cool.
8. Enjoy!
Pro-tip for shredded chicken:
For a 5 minute prep, make sure do 1 of 2 things: 1) buy a rotisserie chicken and shred it. Remember you only need 1/4 cup for 1 serving or 2) you can use left-over shredded chicken (which can easily be made ahead in a crockpot with chicken broth or boiled for 10 minutes on high over the stove in a large sauce pan).
