Have I ever mentioned how much I looooove Mexican inspired dishes? Give me all the tacos, chicken tinga, salsa, enchiladas, refried beans... you get the picture. In honor of 5 de Mayo being tomorrow, I decided to share with you all my salsa dip. It's a favorite amongst my family and friends and it only takes 5 minutes to make.

Preparation time: 10 minutes
Cook time: 0 minutes
Total duration: 10 minutes
Yields: 2 bowls of salsa
Ingredients:
3-4 tomatoes
1 jalapeno
1 garlic clove
1/2 a lemon
1/2 white onion
1/4 cup of cilantro leaves (or a handful)
Salt and pepper to taste
Steps:
1. Cut your tomatoes into quarters, set aside. Cut the top off the jalapeño and then cut into halves. Depending on how spicy you want your salsa, either remove the seeds completely (I recommend to do so if little ones will be enjoying this dish) or only remove the seeds from one side, then set aside. Mince your garlic clove. Remove the cilantro leaves from its stems. Lastly, cut your halved onion into halves. Don't worry, your food processor will do the rest.
2. Add all ingredients from the prior step into your food processor, squeeze juice of the 1/2 lemon into the food processor, and add salt and pepper to taste. Choose the "crush" setting and let it blend until it reaches the right consistency (mostly liquid with fine small chunks of the ingredients you added.
3. Enjoy with your favorite chips!
If you liked this recipe, let me know below. If you try it, share it with me! Not that it's necessary, but it always feels good to know someone out there is enjoying my recipes!
From my home to yours,
Nat
