Strawberry Muffins

As the summer is coming to end, I thought I'd make one more summer inspired recipe to close it out. From here on out - its apples and pumpkins y'all!
These muffins are not too sweet and the bites of real strawberries gives the muffin a sense of freshness. They are so delicious and addicting, you'll find yourself going back for seconds and thirds. In my opinion, they're best enjoyed with a freshly brewed cup of coffee.
Without further ado, here's how you can make them too!
Prep time: 15 minutes
Cook time: 20 minutes
Total duration: 35 minutes + 15 minutes for cooling.
Yields: 12 muffins
Ingredients:
Muffins:
1/4 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup buttermilk
1 3/4 cup fresh strawberries, diced small
Instructions:
1. Preheat oven to 350 F.
2. Line muffin pan with liners.
3. Dice your strawberries into small sizes until you reach the tippity tops of your measuring cups. Set them aside.
4. Add the butter and sugar into mixing bowl and beat the butter and sugar with an electric mixer (or use an electric mixing bowl if you have one). Add in the egg and vanilla and beat until combined. Set Aside.
5. In a separate bowl, sift together your flour, baking powder, and salt.
Alternating between the two, slowly add the buttermilk and flour mixture into the butter/sugar/egg/vanilla mixture while beating at a gentle speed. Beat until well combined into one batter.
6. Add in your diced strawberries into the batter and carefully fold them into the batter using a baking spatula.
7. Scoop 1/4 cup of the batter into each muffin liner.
8. Bake the muffins for 18-20 minutes. To test if they are fully baked, stick a fork into one of the muffins. If the fork comes out clean, they are ready to be taken out the oven. Once you have removed the muffins from the oven, let cool for 15 minutes before serving.
